Soba Noodle Bowl with Miso Tahini Dressing 🥢
Ingredients:
For the Noodles:
8 ounces soba noodles
1 teaspoon salt
For the Chicken:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Bowl:
1 cup chopped broccoli florets
1/2 cup chopped carrots
1/4 cup chopped red onion
1/4 cup chopped green onions
For the Miso Tahini Dressing:
1/4 cup tahini
2 tablespoons miso paste
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Cook the Noodles: Bring a large pot of salted water to a boil. Add soba noodles and cook according to package directions. Drain and rinse with cold water.
Grill the Chicken: Preheat grill to medium-high heat. Season the chicken with garlic powder, onion powder, salt, and pepper. Grill the chicken for 2-3 minutes per side, or until cooked through.
Roast the Vegetables: Preheat oven to 400°F (200°C). Toss the broccoli and carrots with olive oil, garlic powder, onion powder, salt, and pepper. Spread the vegetables in a single layer on a baking sheet. Roast for 20-25 minutes, or until tender-crisp.
Make the Miso Tahini Dressing: In a small bowl, whisk together tahini, miso paste, soy sauce, rice vinegar, garlic, salt, and pepper.
Assemble the Bowls: Divide the soba noodles among bowls. Top with grilled chicken, roasted vegetables, and green onions. Drizzle generously with the Miso Tahini Dressing.
Tips:
You can use any type of chicken you like for this recipe.
For a spicier dressing, add a pinch of red pepper flakes to the Miso Tahini Dressing.
Serve the bowls with your favorite side dishes, such as seaweed salad, pickled ginger, or edamame.
