Ingredients:
For the Chicken:
2 boneless chicken thighs or breasts, cut into chunks 🍗
1 tbsp soy sauce
1 tbsp honey 🍯
1 tbsp teriyaki sauce
1 tsp garlic (minced)
1 tsp olive oil
For the Bowl:
1 cup jasmine or basmati rice, cooked 🍚
½ cup steamed broccoli 🥦
½ cucumber, sliced 🥒
2 tbsp hummus (plain or flavored)
Instructions:
Cook the rice according to package directions and set aside.
Marinate chicken in soy sauce, teriyaki sauce, honey, garlic, and olive oil for at least 10 minutes.
Sear chicken in a nonstick pan over medium-high heat until browned and cooked through (about 8–10 minutes). Let the sauce reduce until sticky.
Steam broccoli until tender yet crisp (around 5 minutes).
Assemble your bowl: Add rice, top with teriyaki chicken, cucumber slices, broccoli, and a spoonful of hummus.
Optional: Sprinkle with sesame seeds or chopped green onions.
