Teriyaki Tempeh with Sesame Vegetable Noodles
Asian-Inspired Glazed Tempeh with Stir-Fried Sesame Vegetable Noodles
Ingredients:

8 oz tempeh, cut into 1/2-inch thick slices
8 oz rice noodles
2 tbsp sesame oil, divided
1 red bell pepper, thinly sliced
2 carrots, julienned
1 cup snow peas, trimmed
2 cups baby bok choy, roughly chopped
3 green onions, sliced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp sesame seeds, divided
1/4 cup fresh cilantro, chopped

For the teriyaki sauce:

1/3 cup low-sodium soy sauce or tamari
3 tbsp maple syrup
1 tbsp rice vinegar
1 tsp sesame oil
1 clove garlic, minced
1 tsp fresh ginger, grated
1 tbsp cornstarch
2 tbsp water

Directions:

Steam tempeh for 10 minutes to remove bitterness. While steaming, whisk together all teriyaki sauce ingredients except cornstarch and water in a small bowl.
In a separate small bowl, mix cornstarch and water to create a slurry. Add to teriyaki mixture and set aside.
Cook rice noodles according to package instructions until al dente. Drain, rinse with cold water, and toss with 1 teaspoon of sesame oil to prevent sticking. Set aside.
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add tempeh slices and cook for 2-3 minutes per side until golden brown.
Pour half of the teriyaki sauce over the tempeh and reduce heat to medium-low. Simmer for 3-4 minutes until the sauce thickens and coats the tempeh. Remove tempeh from pan and set aside.
In the same pan, add remaining sesame oil. Add garlic and ginger, sautéing for 30 seconds until fragrant.
Add bell pepper, carrots, and snow peas. Stir-fry for 3-4 minutes until vegetables begin to soften.
Add bok choy and cook for another 2 minutes until just wilted.
Add cooked noodles, remaining teriyaki sauce, half of the sesame seeds, and green onions to the pan. Toss everything together and cook for 1-2 minutes until heated through.
Serve noodles topped with teriyaki tempeh slices, garnished with remaining sesame seeds and fresh cilantro.
