Giant Reese’s Peanut Butter Cup Pie
Ingredients:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
- 4 large Reese’s Peanut Butter Cups, chopped
- 1/2 cup mini Reese’s Peanut Butter Cups, halved (for topping)
- 1/4 cup chocolate syrup, for drizzling
Directions:
1. Preheat oven to 350°F (175°C).
2. In a medium bowl, mix chocolate cookie crumbs with melted butter until evenly combined.
3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust.
4. Bake the crust for 8 minutes, then remove and let cool completely.
5. In a large bowl, beat the cream cheese until smooth and creamy.
6. Add the peanut butter, powdered sugar, and vanilla extract, mixing until well combined.
7. In a separate bowl, whip the heavy cream until stiff peaks form.
8. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.
9. Stir in the chopped Reese’s Peanut Butter Cups.
10. Pour the filling into the cooled crust and spread evenly.
11. Refrigerate the pie for at least 4 hours, or until set.
12. Before serving, garnish the top with halved mini Reese’s Peanut Butter Cups and drizzle with chocolate syrup.
