Ingredients:
2 lbs beef chuck, cut into 1-inch cubes π₯©
2 tbsp vegetable oil πΎ
Salt & pepper to taste π§
1 large onion, diced π§
4 cloves garlic, minced π§
1 tbsp tomato paste π
3-4 dried ancho chiles πΆοΈ
3-4 dried guajillo chiles πΆοΈ
4 cups beef broth π₯£
1 tbsp ground cumin πΏ
1 tbsp smoked paprika πΆοΈ
1 tsp dried oregano πΏ
1 tsp cayenne pepper (optional, for extra heat) π₯
1 tbsp masa harina (optional, for thickening) π½
Instructions:
Prepare the Dried Chiles:
Remove the stems and seeds from the dried chiles. In a skillet over medium heat, toast the chiles for 1-2 minutes on each side until fragrant (be careful not to burn them).
Place the toasted chiles in a bowl, cover with hot water, and let them soak for 15-20 minutes until softened. Drain and blend the chiles with a little beef broth until smooth.
Brown the Beef:
Season the beef cubes with salt and pepper. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, ensuring each piece is nicely seared. Remove and set aside.
SautΓ© the Aromatics:
In the same pot, add the diced onions and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant. Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.
Add the Spices and Chiles:
Add the blended chiles, cumin, smoked paprika, and oregano. Stir to coat the onions and garlic in the spices, then add the beef back to the pot.
Simmer the Chili:
Pour in the beef broth, ensuring the meat is fully covered. Bring to a boil, then reduce heat to low and let the chili simmer uncovered for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
Thicken (Optional):
If you prefer a thicker chili, stir in 1 tbsp of masa harina mixed with a bit of water. Simmer for an additional 10-15 minutes until the chili reaches your desired consistency.
Serve:
Ladle the Texas Beef Red Chili into bowls and garnish with your choice of toppings: shredded cheese, chopped onions, sliced jalapeΓ±os, or a dollop of sour cream.
This Texas-style chili is bold, smoky, and packed with deep flavors. Perfect for serving with cornbread or over rice! πΆοΈπ
