Braised Pork Ribs with Potatoes Recipe
Ingredients:
- 1 lb pork ribs, cut into 2-inch pieces
- 1 lb potatoes, peeled and cut into large chunks
- 2 tablespoons soy sauce
- 1 tablespoon cooking wine
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 teaspoon five-spice powder (or a combination of star anise, cloves, cinnamon, Sichuan peppercorns, and fennel seeds)
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 scallions, chopped (for garnish)
- Vegetable oil
- Water
Instructions:
1. Sear the ribs: Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Sear the pork ribs on all sides until lightly browned. This step helps to develop flavor and color. Remove the ribs and set aside.
2. Sauté aromatics: Add minced garlic and ginger to the pot and sauté for about 30 seconds until fragrant.
3. Combine ingredients: Return the ribs to the pot. Add soy sauce, cooking wine, oyster sauce, brown sugar, and five-spice powder. Stir well to coat the ribs.
4. Add potatoes and water: Add the potatoes and enough water to almost cover the ribs and potatoes. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 1-1.5 hours, or until the ribs are tender and the potatoes are cooked through. Check and stir occasionally to prevent sticking.
5. Thicken the sauce (optional): If you prefer a thicker sauce, you can remove the ribs and potatoes and simmer the remaining liquid for a few more minutes until it reduces slightly.
6. Garnish and serve: Return the ribs and potatoes to the pot, stir to coat them in the sauce, and garnish with chopped scallions. Serve hot with rice.

- Using a Dutch oven or heavy-bottomed pot helps to maintain even heat distribution during braising.
- Adjust the amount of brown sugar to your preference for sweetness.
