Ingredients:
- 4 salmon fillets, skinless
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 1/2 teaspoon paprika
- Salt and pepper to taste

Directions:
1. Preheat your oven to 375Β°F (190Β°C).
2. Heat olive oil in a pan over medium heat. Add minced garlic and sautΓ© for 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat.
3. In a bowl, mix the cooked spinach with feta cheese, cream cheese, and lemon zest. Stir until well combined.
4. Carefully slice each salmon fillet down the middle to create a pocket, being careful not to cut all the way through.
5. Stuff each fillet with the spinach-feta mixture and secure with toothpicks if necessary.
