Ingredients
For the Crust:
1½ cups chocolate cookie crumbs (about 24 Oreos, crushed)
3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract
1 cup heavy whipping cream

1 cup heavy whipping cream
2 tablespoons powdered sugar

Instructions
Prepare the Crust:
In a mixing bowl, combine the chocolate cookie crumbs and melted butter until the mixture resembles wet sand. Press the mixture evenly into the bottom and up the sides of a 9-inch pie pan. Chill the crust in the refrigerator while you prepare the filling.
Make the Filling:
In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the peanut butter, powdered sugar, and vanilla extract, and mix until fully combined. In a separate bowl, whip the heavy cream with a hand mixer until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture in three parts, being careful not to deflate it.
Assemble the Pie:
Pour the peanut butter filling into the chilled crust, smoothing the top with a spatula. Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
Prepare the Whipped Cream Topping:
In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the chilled pie or pipe it decoratively around the edges.
Garnish and Serve:
Sprinkle shaved chocolate or crushed peanuts over the top for added texture and flavor. Slice and serve chilled for a rich, creamy dessert that’s sure to impress.
