Easy No Bake Chocolate Peanut Butter Cookies
Ingredients:
- ½ cup salted butter, real butter, do not substitute
- ½ cup milk (skim, 1%, 2%, or whole)
- 2 cups granulated sugar
- ½ cup unsweetened cocoa (Hershey’s Natural Unsweetened Cocoa recommended)
- 1 teaspoon pure vanilla extract
- ½ cup creamy peanut butter
- 3 cups quick oats (quick-cooking oatmeal) or old-fashioned oats
Directions:
1. In a medium saucepan, combine butter, milk, sugar, and unsweetened cocoa.
2. Bring the mixture to a rolling boil over medium heat, stirring constantly. Boil for exactly 1 minute to ensure the sugar dissolves and the mixture thickens slightly.
3. Remove the saucepan from heat and immediately stir in the vanilla extract and creamy peanut butter until smooth and fully incorporated.
4. Add the oats to the chocolate mixture and stir until all oats are evenly coated.
5. Drop spoonfuls of the mixture onto wax paper or parchment paper to form cookies.
6. Allow the cookies to cool and set at room temperature until firm, about 30 minutes. For faster setting, place them in the refrigerator.
