🛒 Ingredients
For the Chicken & Marinade:
500g boneless chicken breast 🍗, cubed
1 tbsp soy sauce 🥢
1 tsp sesame oil
1 tsp cornstarch
For the Stir-Fry:
2 tbsp vegetable oil 🌻
1 onion 🧅, sliced
2 garlic cloves 🧄, minced
1 carrot 🥕, sliced
1 bell pepper (green or red) 🫑, chopped
5-6 mushrooms 🍄, sliced
1 small potato 🥔, diced and parboiled
2-3 spring onions 🌱, chopped
Fresh cilantro 🌿, for garnish
For the Sauce:
2 tbsp soy sauce 🥢
1 tbsp oyster sauce
1 tbsp hoisin sauce
1 tsp sugar
2 tbsp water
To Serve:
Steamed white rice 🍚
👨🍳 Instructions
In a bowl, marinate the chicken with soy sauce, sesame oil, and cornstarch for 10 minutes. Heat oil in a large pan or wok and sauté onions and garlic until fragrant. Add the chicken and cook until golden. Toss in carrots, bell pepper, mushrooms, and potatoes, and stir-fry for a few minutes. Mix all sauce ingredients in a small bowl and pour into the pan. Stir well until everything is coated and cooked through. Add spring onions, stir once more, and garnish with fresh cilantro. Serve hot with steamed rice!

You can swap chicken for tofu or shrimp.
Add chili flakes for a spicy kick.
