Peanut Butter Fudge

Ingredients:

- 1 tablespoon water (for the 8×8 pan to help keep the parchment paper in place)
- 1 cup unsalted butter
- 1½ cups creamy peanut butter (NOT natural or natural no-stir varieties)
- 2 teaspoons vanilla extract
- 3¼ cups powdered sugar (sifted)
- M&M’s (optional, for garnishing the tops of each piece of fudge)

Directions:

1. Lightly grease an 8×8-inch baking pan and place parchment paper inside. Add 1 tablespoon of water to the pan to help keep the parchment paper in place while pouring and smoothing the fudge.
2. In a medium saucepan, melt the unsalted butter over low heat until fully melted.
3. Remove from heat and immediately stir in the creamy peanut butter until smooth and fully combined.
4. Add the vanilla extract and stir well.
5. Gradually add the sifted powdered sugar, mixing thoroughly after each addition until the mixture is thick and smooth.
6. Quickly pour the fudge mixture into the prepared pan and spread evenly with a spatula.
7. If desired, sprinkle M&M’s on top for a colorful garnish, gently pressing them into the fudge.
8. Refrigerate for at least 2 hours, or until the fudge is firm.
9. Once set, lift the fudge out of the pan using the parchment paper edges and cut into squares.
