Smothered Pork Chops & Gravy Skillet
Ingredients:
4 bone-in pork chops (about 1 inch thick)
1/2 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
2 tablespoons olive oil
2 tablespoons butter
1 large onion, thinly sliced
2 cloves garlic, minced
2 tablespoons all-purpose flour (for gravy)
2 cups chicken broth
1/2 cup heavy cream (optional for creamier gravy)
Fresh thyme or parsley for garnish
Directions:
In a shallow bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper. Dredge the pork chops in the seasoned flour. Set aside.
Heat olive oil in a large skillet over medium-high heat. Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.
In the same skillet, reduce heat to medium. Melt butter and sauté onions until softened and golden, about 7–10 minutes.
Add garlic and cook for 1 more minute. Sprinkle flour over onions and stir to coat.
Gradually whisk in chicken broth, scraping up browned bits. Bring to a simmer and stir until gravy thickens. Stir in heavy cream if using.
Return pork chops to skillet. Spoon gravy over the top, cover, and simmer on low heat for 15–20 minutes until pork is cooked through and tender.
Garnish with fresh herbs and serve hot with mashed potatoes, rice, or your favorite side.
