For the Rice:
🍚 White rice - 1 cup (uncooked)
🌿 Cilantro (chopped) - 2 tbsp

For the Roasted Corn:
🌽 Corn kernels (grilled or canned) - 1 cup
🌿 Olive oil - 1 tsp
🧂 Salt - to taste
For the Creamy Dressing:
🥛 Greek yogurt - 1/4 cup
🌿 Cilantro (chopped) - 1 tbsp
🍋 Lime juice - 1 tbsp
🧄 Garlic (minced) - 1 clove
🧂 Salt and pepper - to taste
For Garnish:
🌿 Fresh cilantro leaves
Directions
Prepare the chicken: In a bowl, toss the chicken cubes with olive oil, paprika, garlic powder, lime juice, salt, and pepper. Heat a skillet or grill pan over medium-high heat and cook the chicken for 4-5 minutes per side until golden and cooked through. Set aside.
Cook the rice: Rinse the rice and cook according to package instructions. Once done, fluff the rice and mix in cilantro, lime juice, and a pinch of salt.
Roast the corn: If using fresh corn, grill the kernels or sauté them in a pan with olive oil and a pinch of salt until lightly charred. If using canned corn, drain and sauté until heated through and slightly golden.
Make the creamy dressing: In a small bowl, whisk together Greek yogurt, cilantro, lime juice, garlic, salt, and pepper. Adjust seasoning to taste.
Assemble the bowl: Layer the cilantro rice in a bowl, top with grilled chicken, roasted corn, and drizzle with the creamy dressing. Garnish with fresh cilantro leaves.
