No-Bake Chocolate Coconut Energy Balls Packed with Protein Power ✨🍫

Ingredients:
1 cup / 90g rolled oats (use certified gluten-free if needed)
1/2 cup / 120g creamy peanut butter or almond butter
1/3 cup / 80ml honey or maple syrup
1/4 cup / 25g unsweetened shredded coconut (+ extra for rolling)
1/4 cup / 30g chocolate protein powder (plant-based or whey)
2 tablespoons / 12g unsweetened cocoa powder
1 tablespoon / 10g chia seeds or ground flaxseed
1 teaspoon / 5ml vanilla extract
Optional: Mini chocolate chips

Directions:
1. In a large bowl, combine rolled oats, peanut/almond butter, honey/maple syrup, shredded coconut, protein powder, cocoa powder, chia/flax seeds, and vanilla extract.
2. Stir well until everything is thoroughly combined. The mixture should be thick and slightly sticky. If too dry, add a tiny bit more nut butter or sweetener; if too wet, add more oats or protein powder.
3. If using, stir in mini chocolate chips.
4. Chill the mixture in the refrigerator for about 15-20 minutes to make it easier to roll.
5. Roll the mixture into small balls, about 1 inch (2.5 cm) in diameter.
6. If desired, roll the finished balls in extra shredded coconut.
7. Place the protein bites on a plate or baking sheet lined with parchment paper.
8. Store in an airtight container in the refrigerator for up to a week.
