Teriyaki Glazed Salmon with Sesame Broccoli Rice
Honey-Kissed Teriyaki Salmon with Sesame-Ginger Broccoli Rice
Ingredients:

4 salmon fillets (6 oz each), skin-on
1/4 cup low-sodium soy sauce
3 tablespoons honey
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon cornstarch
1 tablespoon water
2 cups broccoli florets, finely chopped
3 cups cooked brown rice
2 tablespoons sesame oil, divided
2 green onions, thinly sliced
1 tablespoon sesame seeds, plus more for garnish
1 tablespoon olive oil
Salt and pepper to taste
Lime wedges for serving
Fresh cilantro, chopped for garnish

Directions:

In a small saucepan, combine soy sauce, honey, rice vinegar, half of the ginger, and half of the garlic. Bring to a simmer over medium heat.
In a small bowl, mix cornstarch with water to create a slurry. Add to the saucepan and whisk until the sauce thickens, about 1-2 minutes. Remove from heat and set aside.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat salmon fillets dry with paper towels and place on the prepared baking sheet, skin-side down. Season with salt and pepper.
Brush the salmon fillets generously with half of the teriyaki sauce. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
While the salmon is baking, heat 1 tablespoon sesame oil in a large skillet over medium heat. Add remaining ginger and garlic, sauté for 30 seconds until fragrant.
Add chopped broccoli to the skillet and cook for 3-4 minutes until bright green and slightly tender.
Add cooked rice, remaining tablespoon of sesame oil, green onions, and sesame seeds. Stir-fry for 2-3 minutes until well combined and heated through. Season with salt and pepper to taste.
To serve, divide the broccoli rice among plates and top with salmon fillets. Brush the remaining teriyaki sauce over the salmon and sprinkle with additional sesame seeds and chopped cilantro.
Serve with lime wedges on the side.
