Ingredients:
2 cups diced pineapple
1 pound chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
1 red bell pepper, diced
1 small onion, diced
2 cloves garlic, minced
1 cup basmati rice
2 cups chicken broth
1 tablespoon soy sauce
1 teaspoon honey
1/4 teaspoon ground ginger
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Sliced green onions (for garnish)
Directions:
Cook the rice: In a saucepan, bring chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until liquid is absorbed.
Cook the chicken: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
Sauté the vegetables: In the same skillet, add a bit more oil if needed, then sauté onion, red bell pepper, and garlic until softened.
Combine ingredients: Add diced pineapple to the skillet and cook for another 2 minutes. Return the chicken to the skillet. Stir in soy sauce, honey, and ground ginger. Cook for an additional 2-3 minutes, stirring occasionally.
Serve: Spoon the cooked rice into bowls. Top with the pineapple chicken mixture. Garnish with chopped cilantro and green onions.
