🍲 Cozy & Comforting Chicken Rice Soup 🥣
There’s nothing like a warm bowl of homemade Chicken Rice Soup to soothe the soul! Perfect for chilly nights, sick days, or when you just need a hug in a bowl. Simple ingredients, big flavor! 💛
🛒 Ingredients:
✔ 1 tbsp olive oil or butter
✔ 1 small onion, diced
✔ 2 carrots, sliced
✔ 2 celery stalks, chopped
✔ 3 garlic cloves, minced
✔ 6 cups chicken broth
✔ 1 cup cooked shredded chicken
✔ ¾ cup uncooked rice (white or brown)
✔ 1 tsp dried thyme
✔ ½ tsp dried oregano
✔ Salt & pepper to taste
✔ Fresh parsley for garnish (optional)
👩🍳 Directions:
1️⃣ Sauté onion, carrots, and celery in a large pot over medium heat until softened (about 5 mins). Add garlic and cook for another minute.
2️⃣ Pour in the broth and bring to a simmer. Stir in rice, thyme, oregano, salt & pepper.
3️⃣ Cook until rice is tender, about 15-20 mins for white rice (or 35 for brown rice).
4️⃣ Add shredded chicken, stir, and let it warm through for a few minutes.
5️⃣ Garnish with fresh parsley and serve hot!
