Chicken Burrito Bowls
Ingredients:

2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 cup cooked rice
1 cup black beans, drained and rinsed
1 cup corn kernels
1 cup cherry tomatoes, halved
1/2 cup shredded cheddar cheese
1/4 cup chopped cilantro
1/2 cup salsa
1/4 cup sour cream
1 lime, cut into wedges
Instructions:

Preheat a skillet over medium heat and add olive oil.
Season the chicken breasts with chili powder, cumin, garlic powder, and salt.
Cook the chicken for 6-7 minutes per side, or until fully cooked. Let it rest, then dice.
In serving bowls, divide the rice, black beans, corn, cherry tomatoes, and cheese.
Add the diced chicken on top and garnish with cilantro.
Drizzle with salsa and sour cream, then serve with lime wedges.
