Korean BBQ Meatball Rice Bowls
Ingredients:
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup green onions, finely chopped
2 cloves garlic, minced
1 tablespoon ginger, grated
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
1 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1 cup cooked rice (white or brown)
1 cup steamed broccoli
1/4 cup sesame seeds (for garnish)
Extra green onions, sliced (for garnish)
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, combine the ground beef, breadcrumbs, green onions, garlic, ginger, soy sauce, brown sugar, sesame oil, black pepper, and red pepper flakes. Mix until well combined.
3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned.
5. While the meatballs are baking, prepare the rice according to package instructions and steam the broccoli.
6. To serve, place a scoop of rice in a bowl, top with meatballs, steamed broccoli, and garnish with sesame seeds and extra green onions.
