🔥 Spicy Garlic Chicken Stir-Fry with Bell Peppers & Steamed Rice 🌶️🍚

🛒 Ingredients:
🍚 1 cup jasmine or basmati rice
🧂 Salt, for boiling rice
🐔 2 chicken breasts, diced
🌶️ 1 green bell pepper, sliced
❤️ 1 red bell pepper, sliced
🧅 1 small onion, sliced
🧄 2 garlic cloves, minced
🧂 Salt & black pepper to taste
🌽 1 tbsp cornstarch
🫒 1 tbsp oil (for cooking)
🌶️ 1 tsp crushed chili flakes (plus more for garnish)
For the Sauce:
🧉 2 tbsp soy sauce
🍯 1 tbsp honey or brown sugar
🍶 1 tbsp rice vinegar or white vinegar
🌶️ 1 tbsp chili garlic sauce (e.g. sambal oelek)
🌽 1/4 cup water + 1 tsp cornstarch (slurry)
👩🍳 Instructions:
Cook the rice: Rinse rice and boil with 2 cups water and a pinch of salt. Simmer covered for 12–15 minutes until fluffy.
Coat the chicken: Toss diced chicken with cornstarch, salt, and pepper. Let sit for 5 minutes.
Prepare the sauce: In a bowl, mix soy sauce, honey, vinegar, chili garlic sauce, and slurry. Set aside.
Sear the chicken: In a hot pan with oil, cook chicken for 5–6 minutes until golden and nearly cooked through. Remove and set aside.
Stir-fry the veggies: In the same pan, sauté garlic for 30 seconds, then add onions and bell peppers. Cook for 3–4 minutes until slightly softened.
Combine & sauce: Return chicken to the pan, pour in the sauce, and stir well. Cook for 2–3 more minutes until thickened and glossy.
Serve: Plate the hot rice with the spicy stir-fry on the side. Garnish with extra chili flakes if desired.

Make it vegetarian with tofu or mushrooms instead of chicken.
Adjust spice by reducing or increasing chili garlic sauce or flakes.
