Coconut Lime Fish with Rice 🐟🍚
Ingredients 🛒
4 white fish fillets (tilapia, cod, or halibut)
1 tbsp olive oil
Salt and pepper to taste
1 can (13.5 oz) coconut milk
2 tbsp lime juice (about 1 lime)
1 tbsp fish sauce
2 cloves garlic, minced
1 tsp red chili flakes
1/4 cup fresh cilantro, chopped
Cooked jasmine rice, for serving
Lime wedges, for garnish

Cook the Fish:
Season the fish fillets with salt and pepper. In a large skillet, heat olive oil over medium heat. Sear the fish for about 3-4 minutes on each side, until golden brown and cooked through. Remove from skillet and set aside.
Make the Coconut Lime Sauce:
In the same skillet, add minced garlic and cook for 1 minute until fragrant. Pour in coconut milk, lime juice, fish sauce, and red chili flakes. Stir well and let it simmer for about 5 minutes until the sauce thickens slightly.
Combine and Serve:
Return the fish to the skillet, spoon the sauce over the top, and cook for another 2 minutes to heat through. Stir in chopped cilantro.
Serve the fish over a bed of cooked jasmine rice. Garnish with lime wedges and extra cilantro for a burst of freshness.
