Ingredients:

For the Okra:

1 pound fresh okra, trimmed and sliced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra heat)

For the Shrimp:

1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper

For Serving:

Cooked white rice (optional, for extra rice)
Chopped green onions (for garnish)

Instructions:

1. Prepare the Dirty Rice: Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and celery and cook until softened, about 5-7 minutes. Add ground chicken or turkey (or andouille sausage) and cook, breaking it up with a spoon, until browned.
2. Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, garlic powder, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked through and liquid is absorbed. Stir in parsley (if using) before serving.
3. Prepare the Okra: While the rice is cooking, heat olive oil in a separate skillet over medium-high heat. Add okra, salt, pepper, and cayenne pepper (if using). Cook, stirring occasionally, until okra is tender-crisp, about 8-10 minutes.
