🗒 Ingredients:
1 1/4 cups all-purpose flour
1 cup unsweetened cocoa powder (Hershey’s Dark preferred)
1 teaspoon kosher salt
1 cup (2 sticks) salted butter, melted and hot
1/4 cup canola oil
1 1/2 cups granulated sugar
1 cup packed brown sugar (light or dark)
4 large eggs
1 tablespoon pure vanilla extract
2 1/2 cups creamy peanut butter
📝 Directions:
Preheat the Oven:
Preheat oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper for easy removal.
Mix the Dry Ingredients:
In a large bowl, whisk together the flour, cocoa powder, and salt.
Make the Wet Base:
In a separate bowl, whisk hot melted butter, canola oil, granulated sugar, and brown sugar for about 1 minute until smooth.
Add eggs and vanilla and whisk another 2 minutes until glossy and thick.
Combine and Form the Batter:
Gradually stir the wet mixture into the dry ingredients just until fully incorporated.
Layer the Batter:
Spread half the brownie batter into the prepared pan.
Use a cookie scoop to evenly dollop peanut butter over the batter.
Use a spatula or knife to smooth the peanut butter into an even layer.
Top and Bake:
Spoon the remaining brownie batter over the peanut butter layer and spread it gently.
Bake for 40–45 minutes, or until mostly set with slightly gooey centers.
Cool and Serve:
Cool in the pan for at least 1 hour before slicing into squares. Serve at room temp—or warm with a scoop of ice cream!
