🐟🍅 Pan-Seared Mediterranean Cod in Tomato-Basil Sauce – Light, Flavorful & Holiday-Inspired! 🌿

📝 Ingredients:
2 cod fillets (approx. 150–180 g each)
Salt & pepper to taste
Juice of ½ lemon 🍋
1 tbsp olive oil
For the Tomato-Basil Sauce:
1 tbsp olive oil
1 shallot, finely chopped
1 garlic clove, minced
300 g cherry tomatoes, halved 🍅
100 ml vegetable broth
1 tsp balsamic vinegar
A handful of fresh basil, roughly chopped 🌿
Salt, pepper, and a pinch of sugar
👨🍳 Instructions:
Drizzle the cod fillets with lemon juice and season with salt and pepper. Heat olive oil in a skillet over medium heat and sear the fillets for about 3–4 minutes per side until golden and just cooked through. Set aside and keep warm.
In the same skillet, heat olive oil and sauté the shallot and garlic until soft. Add cherry tomatoes and cook for 5–7 minutes until softened. Pour in the broth and balsamic vinegar, then season with salt, pepper, and a pinch of sugar. Stir in fresh basil and return the cod fillets to the pan to warm through in the sauce.
Garnish with more basil and serve – perfect with rice, potatoes, or crusty ciabatta bread.
💡 Tips:
You can also use haddock or pollock instead of cod
Add chili flakes or a drizzle of chili oil for some heat 🌶️
Leftovers work great cold as a pasta or couscous salad topping!
