Crunchy Asian Sesame Ginger Salad Bowl (Healthy & Quick!) 🥗🥕
Ingredients:
For the Salad:
5 oz (140g) mixed greens or romaine lettuce, chopped
1 cup shredded carrots
1 red bell pepper, thinly sliced
1/2 cucumber, thinly sliced
1/2 cup cooked edamame, shelled
1/4 cup sliced green onions
1/4 cup chopped fresh cilantro
Optional: Mandarin orange segments, sliced almonds, sesame seeds
For the Sesame Ginger Dressing:
1/4 cup (2 fl oz / 60ml) rice vinegar
2 tablespoons soy sauce or tamari
2 tablespoons toasted sesame oil
1 tablespoon maple syrup or agave nectar
1 tablespoon grated fresh ginger
1 clove garlic, minced
1 tablespoon sesame seeds
Directions:
1. Make the dressing: In a small bowl or jar with a lid, combine rice vinegar, soy sauce/tamari, sesame oil, maple syrup/agave, grated ginger, minced garlic, and sesame seeds. Whisk well or shake the jar until the dressing is emulsified.
2. Assemble the salad: In a large salad bowl, combine the mixed greens/romaine, shredded carrots, sliced red bell pepper, sliced cucumber, cooked edamame, sliced green onions, and chopped cilantro.
3. Add any optional ingredients like mandarin oranges or sliced almonds.
4. Pour the sesame ginger dressing over the salad just before serving.
5. Toss gently until all the ingredients are lightly coated.
6. Sprinkle with extra sesame seeds if desired. Serve immediately.
