Ingredients
For the crust:
1½ cups chocolate cookie crumbs (like Oreos, minus filling)
¼ cup granulated sugar
6 tbsp unsalted butter, melted
For the peanut butter layer:
8 oz cream cheese, softened
¾ cup powdered sugar
½ cup creamy peanut butter
1 tsp pure vanilla extract
½ cup heavy whipping cream, cold
For the chocolate layer:
8 oz cream cheese, softened
¾ cup powdered sugar
½ cup semi-sweet chocolate, melted and cooled slightly
1 tsp pure vanilla extract
½ cup heavy whipping cream, cold
For the topping:
1 cup cold heavy whipping cream
2 tbsp powdered sugar
1 tsp pure vanilla extract
1 cup mini Reese’s Peanut Butter Cups, halved or quartered
½ cup chopped roasted peanuts (optional, for extra crunch)
¼ cup chocolate syrup or ganache (for drizzling)
Instructions
Prepare the crust: In a medium bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press firmly into the bottom of a 9×9-inch glass dish. Chill while preparing the layers.
Make the peanut butter layer: In a large bowl, beat softened cream cheese, powdered sugar, peanut butter, and vanilla until smooth. In a separate chilled bowl, whip the cold heavy cream to stiff peaks. Gently fold into the cream cheese mixture until fully incorporated. Spread evenly over the chilled crust.
Make the chocolate layer: In another clean bowl, beat the second batch of softened cream cheese, powdered sugar, melted chocolate, and vanilla until smooth. Whip the remaining cold heavy cream to stiff peaks in a separate bowl, then gently fold into the chocolate mixture. Carefully spread over the peanut butter layer without mixing the two.
Chill to set: Refrigerate for at least 2 hours—or overnight—for clean slicing and defined layers.
Whip the topping: Just before serving, whip the cold heavy cream with powdered sugar and vanilla until soft peaks form. Pipe or dollop generously over the top using a piping bag or spoon.
Garnish and serve: Scatter halved Reese’s cups across the surface. Sprinkle with chopped peanuts if desired, and drizzle lightly with chocolate syrup. Serve chilled.
