🛒 Ingredients:
For the chicken:
2 boneless chicken breasts
1 tbsp olive oil
Salt & pepper
½ tsp dried oregano
½ tsp garlic powder
For the creamy herb sauce:
1 tbsp butter
2 garlic cloves, minced
½ cup chicken broth
½ cup heavy cream
1 tsp Dijon mustard (optional)
1 tbsp chopped parsley
½ tsp dried thyme
Salt & black pepper
For serving:
1 cup cooked jasmine or basmati rice
1 cup steamed green beans
Extra parsley for garnish
👩🍳 Instructions:
Cook the rice: Prepare rice according to package instructions.
Steam the beans: Steam green beans for 4–5 minutes until tender-crisp. Set aside.
Grill the chicken: Season chicken with oil, salt, pepper, oregano, and garlic powder. Grill or pan-sear over medium heat for 5–6 minutes per side until fully cooked. Let rest, then slice.
Make the sauce: Melt butter in a small pan. Add garlic and cook 30 seconds. Pour in broth and simmer 2 minutes. Stir in cream, thyme, mustard, salt, and pepper. Simmer for 3–4 minutes until slightly thickened. Add parsley last.
Assemble the bowl: Arrange rice, green beans, and sliced chicken in bowls. Spoon sauce generously over chicken.
Garnish and serve.
