🇮🇹 Risotto alla Pescatora (Seafood Risotto)
Creamy risotto packed with fresh seafood and kissed with tomato flavor 🦐🦑🍚
Ingredients:
• 200g Arborio rice
• 400g mixed seafood (shrimp, mussels, squid)
• 1 small onion, finely chopped
• 1 garlic clove, minced
• 500ml fish or vegetable broth
• 100ml dry white wine
• 100g tomato puree
• 2 tbsp olive oil
• Salt and pepper
• Fresh parsley, chopped
Instructions:
1️⃣ Heat olive oil in a pan and sauté onion and garlic.
2️⃣ Add rice and toast for 2 minutes.
3️⃣ Pour in wine and let it evaporate.
4️⃣ Stir in tomato puree and add broth gradually, stirring often.
5️⃣ In last 5 minutes, add seafood and cook until done.
6️⃣ Season and garnish with parsley. Serve warm.
