Lemon Herb Salmon with Shrimp and Broccoli 🐟

Ingredients 🛒
2 salmon fillets (6 oz each) 🐟
8 large shrimp, peeled and deveined 🍤
1 lemon, sliced 🍋
2 tbsp olive oil 🫒
1 tsp garlic powder 🧄
1 tsp dried Italian herbs 🌿
Salt and pepper to taste 🧂
1 cup uncooked rice (white or wild) 🍚
2 cups broccoli florets 🥦
1 tbsp butter 🧈
Fresh parsley, chopped 🌱
Instructions 🍳
Cook the Rice: In a medium pot, cook the rice according to package instructions (usually 1 cup rice to 2 cups water, simmer for 15-20 minutes). Fluff with a fork and set aside. 🍚⏳
Season the Salmon and Shrimp: Pat the salmon fillets dry and season both sides with garlic powder, Italian herbs, salt, and pepper. Season the shrimp with the same spices. Drizzle everything with 1 tbsp olive oil. 🐟🍤
Sear the Salmon: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down and cook for 4-5 minutes until crispy. Flip, add a lemon slice on top of each fillet, and cook for another 3-4 minutes until just cooked through. Remove and set aside. 🍋🔥
Cook the Shrimp and Broccoli: In the same skillet, add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp. Add broccoli to the skillet with 1 tbsp butter and a splash of water, cover, and steam for 4-5 minutes until tender. 🥦🍤
