Garlic Shrimp & Brown Rice Bowl

Ingredients:

1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/4 cup dry white wine (optional, can substitute with chicken broth)
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup brown rice, cooked according to package directions
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup crumbled feta cheese (optional)

Instructions:

1. Pat the shrimp dry with paper towels. This helps them brown nicely.
2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
3. Add the minced garlic and red pepper flakes (if using) to the skillet and cook for about 30 seconds, or until fragrant. Be careful not to burn the garlic.
4. If using white wine, pour it into the skillet and scrape up any browned bits from the bottom. Let it simmer for a minute or two, allowing the alcohol to cook off slightly. If using chicken broth, add it now.
5. Stir in the lemon juice, parsley, salt, and pepper.
6. Add the cooked shrimp back to the skillet and toss to coat in the sauce.
7. To assemble the bowls, divide the cooked brown rice evenly among four bowls.
8. Top the rice with the garlic shrimp and sauce.
9. Add the halved cherry tomatoes and diced cucumber.
10. Sprinkle with crumbled feta cheese (if using).
11. Serve immediately and enjoy!
