🍪 Reese’s Peanut Butter Chocolate Chip Cookie Bites 🍫
Ingredients:
1/2 cup softened unsalted butter
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup mini semisweet chocolate chips
12 unwrapped mini Reese’s peanut butter cups
1/2 cup dark or milk chocolate, melted (for drizzling)
Instructions:
Preparation: Begin by preheating your oven to 350°F (175°C). Lightly grease a mini muffin tin or line it with paper liners for easy removal.
Cream the Mixtures: In a large mixing bowl, beat the softened butter and peanut butter together until smooth and creamy. Gradually add the granulated sugar and brown sugar, continuing to mix until light and fluffy.
Combine Wet Ingredients: Crack the egg into the mixture and stir in the vanilla extract. Blend thoroughly until fully incorporated.
Add Dry Ingredients: Sift the flour, baking soda, and salt into a separate bowl. Slowly incorporate this dry mixture into the wet ingredients, mixing gently until just combined. Avoid overmixing to keep the cookies tender.
Fold in Chocolate Chips: Gently fold in the mini chocolate chips, ensuring they’re evenly distributed throughout the dough.
Shape the Dough: Scoop out approximately 1 tablespoon of dough per cookie and roll it into a ball. Place each ball into a prepared mini muffin cup, pressing down slightly to flatten the top.
Bake: Transfer the muffin tin to the preheated oven and bake for 10–12 minutes, or until the edges turn golden brown and the centers appear set.
Add Peanut Butter Cups: While the cookie bites are still warm, carefully press one mini Reese’s peanut butter cup into the center of each bite. This will allow the cup to sink slightly into the soft cookie.
Cool and Drizzle: Allow the cookie bites to cool completely in the pan. Once cooled, melt the chocolate for drizzling. Use a spoon or piping bag to create decorative lines across the tops of the bites.
Serve: Store the cookie bites in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
