Cuban Mojo Marinated Pork
Ingredients:
For the Pork:
1 lb pork tenderloin or pork chops, thinly sliced into strips
2 tablespoons olive oil
Salt and pepper, to taste
3 cloves garlic, minced
1 tablespoon ginger, minced (optional for extra flavor)
1/4 cup honey
3 tablespoons soy sauce (low-sodium if preferred)
1 tablespoon rice vinegar or apple cider vinegar
1 tablespoon sesame oil
1 teaspoon cornstarch (optional, for thickening the sauce)
For the Rice Bowl:
2 cups cooked rice (white, brown, or jasmine rice)
1 cup steamed broccoli or other vegetables (such as carrots, bell peppers, or snap peas)
1/4 cup green onions, sliced
1 tablespoon sesame seeds (optional, for garnish)
Fresh cilantro (optional, for garnish)
Instructions:
1. Prepare the pork:
Slice the pork into thin strips or medallions.
Season the pork with salt and pepper.
2. Cook the pork:
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the pork and cook for about 5-6 minutes, stirring occasionally, until browned and cooked through.
Remove the cooked pork from the skillet and set aside.
3. Make the honey garlic sauce:
In the same skillet, add a little more olive oil if needed and sauté the minced garlic and ginger (if using) for about 30 seconds until fragrant.

Return the cooked pork to the skillet and toss to coat in the honey garlic sauce. Cook for an additional 2-3 minutes until the pork is glazed and fully coated with the sauce.
5. Assemble the rice bowls:
To serve, divide the cooked rice between bowls.
Top with the honey garlic pork and pour extra sauce over the top.
Add steamed vegetables (like broccoli, snap peas, or carrots), and sprinkle with sliced green onions and sesame seeds.
Optionally, garnish with fresh cilantro.
