Cabbage Beef Bake 🥘
Ingredients:
For the Filling:
1 medium head of cabbage, shredded
1 pound ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup cooked rice
1 teaspoon ground coriander
1 teaspoon smoked paprika
Salt and black pepper to taste
For the Tomato Sauce:
1 can (14.5 oz) diced tomatoes
1 tablespoon brown sugar
1 cup beef stock
Salt and black pepper to taste
Instructions:
Prepare the Cabbage:
Bring a large pot of salted water to a boil.
Add the shredded cabbage and blanch for about 2-3 minutes until slightly tender.
Drain and set aside.
Cook the Beef Filling:
In a skillet over medium heat, sauté the chopped onion and minced garlic until softened.
Add the ground beef, cooking until browned. Drain excess fat if necessary.
Stir in the cooked rice, ground coriander, smoked paprika, salt, and black pepper.
Remove from heat and let the mixture cool slightly.
Assemble the Casserole:
Preheat your oven to 350°F (175°C).
In a greased baking dish, layer half of the blanched cabbage.
Spread the beef mixture evenly over the cabbage.
Top with the remaining cabbage.
Prepare the Tomato Sauce:
In a saucepan, combine the diced tomatoes, brown sugar, beef stock, salt, and black pepper.
Simmer over low heat for about 10 minutes to allow flavors to meld.
Bake:
Pour the tomato sauce over the assembled casserole.
Cover with foil and bake for 45 minutes.
Remove the foil and bake for an additional 15 minutes until the top is slightly crispy.
Serve:
Let the casserole rest for a few minutes before serving.
