For the chicken meatballs 🍗
Ground chicken
Garlic (minced)
Fresh dill & parsley (chopped)
Onion (grated)
Egg
Breadcrumbs
Salt & pepper
Olive oil (for cooking)
For the bowl 🍚🥗
Cooked white rice
Cucumber slices
Cherry tomatoes (halved)
Red onion (thinly sliced)
For the tzatziki dip 🥒🧄
Greek yogurt
Cucumber (grated)
Garlic (minced)
Fresh dill
Lemon juice
Olive oil
Salt & pepper
Instructions:
Mix ground chicken with garlic, onion, herbs, breadcrumbs, egg, salt, and pepper. Form into meatballs and pan-fry in olive oil until golden and cooked through. For the tzatziki, combine yogurt with grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper. Assemble bowls with a base of rice, add meatballs, fresh veggies, and a generous scoop of tzatziki on the side. Garnish with more dill and enjoy fresh!
Notes & Variations:
Swap rice for quinoa or couscous. Use turkey mince instead of chicken, or add a bit of feta to the meatball mix for extra flavor.
