A rich and indulgent chocolate cake layered with creamy peanut butter frosting and topped with a luscious chocolate ganache drip, perfect for any celebration or a sweet treat!
Ingredients:
For the Cake:
• 2 cups all-purpose flour
• 1 3/4 cups granulated sugar
• 3/4 cup cocoa powder (unsweetened)
• 2 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 1 cup buttermilk
• 1/2 cup vegetable oil
• 2 large eggs
• 1 cup boiling water
For the Peanut Butter Frosting:
• 1 cup unsalted butter (softened)
• 1 cup creamy peanut butter
• 4 cups powdered sugar
• 1/4 cup heavy cream (adjust for desired consistency)
For the Ganache Drip:
• 1/2 cup semi-sweet chocolate chips
• 1/4 cup heavy cream
Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Make the Cake Batter: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. In another bowl, combine the buttermilk, vegetable oil, and eggs. Mix the wet ingredients into the dry ingredients until just combined. Gradually stir in the boiling water until the batter is smooth.
Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Prepare the Peanut Butter Frosting: In a large bowl, beat the softened butter and peanut butter together until creamy. Gradually add the powdered sugar, mixing well. Add the heavy cream a little at a time until you reach your desired frosting consistency.
Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of peanut butter frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining peanut butter frosting.
Make the Ganache Drip: In a small saucepan, heat the heavy cream over low heat until it begins to simmer. Remove from heat and add the chocolate chips, stirring until smooth and glossy. Allow to cool slightly before drizzling over the top of the cake, letting it drip down the sides.
