2 salmon fillets
1 tbsp olive oil
1 tbsp butter
1 small onion, chopped
2 cloves garlic, minced
1 cup coconut milk
1 tsp red curry paste
1 tsp paprika
Β½ tsp turmeric
Β½ tsp salt & pepper
1 tbsp lime juice
1 tbsp chopped cilantro (for garnish)
Cooked jasmine rice (for serving)
Instructions:
1️⃣ Sear the Salmon: Heat olive oil in a pan over medium heat. Cook salmon fillets 2-3 minutes per side until golden. Remove and set aside.
