Spicy Lentil Curry ππΆοΈ
A vegan-friendly curry bursting with spices and earthy lentils.
Ingredients:
1 cup red lentils (rinsed)
2 tbsp vegetable oil
1 onion (diced)
2 garlic cloves (minced)
1-inch piece ginger (grated)
2 tsp curry powder
1 tsp turmeric
1 tsp cayenne pepper
1 can (14 oz) coconut milk
1 cup vegetable broth
1 fresh red chili (sliced)
Fresh cilantro for garnish
Instructions:
Cook Aromatics: Heat oil in a pot and sautΓ© onion, garlic, and ginger until fragrant.
Add Spices: Stir in curry powder, turmeric, and cayenne. Cook for 1 minute.
Simmer Lentils: Add lentils, coconut milk, and vegetable broth. Simmer for 20 minutes, stirring occasionally.
Serve: Garnish with sliced chili and cilantro. Serve with naan or rice.
