Vermicelli Noodles Salad
Ingredients:
1- 10 ounces thin vermicelli noodles
2 carrots, shredded
1 cup fresh bean sprouts or any vegetable of choice
1/4 cup chopped cilantro
Hot water
Sauce:
1/3 cup cup fish sauce or soy sauce
1/3 cup seasoned rice vinegar
3 tablespoons sugar
2 cloves garlic minced
1/2 teaspoon crushed red pepper
Lime juice
Peanuts (optional)
Steps:
In a large bowl, add the vermicelli noodles. Add hot water and let it soak for 3-5 minutes till softened.
Drain and add into the bowl. Add carrots, bean sprouts and cilantro.
Prepare the sauce:
Mix all ingredients except lime and peanuts.
Pour the sauce into the bowl of noodles and veggies. Mix well till combined. Add lime juice and garnish roasted peanuts. Ready to serve. Enjoy!
