Hearty Lamb Curry ππ
This rich and aromatic lamb curry is packed with bold spices and tender meat, making it a comforting and flavourful dish. Perfect with naan or basmati rice!
Ingredients:
For the Curry:
π’οΈ Vegetable Oil: 3 tbsp

Onions: 2 large, finely chopped
π§ Garlic: 3 cloves, minced

Ginger: 1-inch piece, grated
π₯ Ground Coriander: 1 tsp
πΆοΈ Ground Cumin: 1 tsp
πΏ Turmeric Powder: 1/2 tsp
πΆοΈ Chilli Powder: 1 tsp (adjust to taste)
π± Garam Masala: 1 tsp

Tinned Chopped Tomatoes: 400g
π Lamb: 500g, cubed
π§ Salt: To taste
π§ Water: 250ml
πΏ Fresh Coriander: For garnish
Method:
1. SautΓ© the Base:
π₯ Heat the Oil:
In a large pan, heat the oil over medium heat. Add the onions and cook for 8β10 minutes until golden and caramelised.
π§ Add Garlic and Ginger:
Stir in the garlic and ginger, cooking for 1β2 minutes until fragrant.
2. Add the Spices:
πΏ Toast the Spices:
Add ground coriander, cumin, turmeric, chilli powder, and garam masala. Stir well and cook for 1 minute to release their aroma.

Add Tomatoes:
Pour in the chopped tomatoes and cook for 5β7 minutes until the mixture thickens and darkens in colour.
3. Cook the Lamb:
π Brown the Lamb:
Add the lamb cubes and stir until theyβre coated in the spice mixture. Cook for 5 minutes to seal in the flavours.
π§ Simmer:
Pour in the water, season with salt, and bring to a boil. Reduce the heat to low, cover, and let it simmer for 45β60 minutes, stirring occasionally, until the lamb is tender and the sauce thickens.
4. Garnish and Serve:

Sprinkle with fresh coriander before serving. Pair with steamed rice or warm naan bread.
Tips:
For extra richness, stir in a spoonful of plain yoghurt or cream just before serving.
For a deeper flavour, marinate the lamb in yoghurt, garlic, and spices for a few hours before cooking.
