For the chicken:
250 g (9 oz) chicken breast, diced π
1 tbsp olive oil
1 garlic clove, minced π§
Salt & pepper to taste
Optional: a dash of soy sauce or lemon juice π
For the rice:
120 g (2/3 cup) white rice π
240 ml (1 cup) water
Pinch of salt
For the veggies:
1 medium zucchini, chopped π₯
1 large carrot, julienned π₯
1 tbsp olive oil
Salt & pepper to taste
Optional: soy sauce, garlic, or sesame seeds for extra flavor

Start by cooking the rice in salted water according to package directions. While the rice cooks, heat oil in a pan and sautΓ© garlic and chicken until golden and cooked throughβseason to taste. In another pan, stir-fry the zucchini and carrots in olive oil for about 5β7 minutes until just tender, seasoning with salt and pepper. Serve the rice with the sautΓ©ed chicken and vegetables on the side. Enjoy hot!
