¼ cup olive oil
2 tablespoons butter
2 large carrots, shredded (about 1 cup)
1 medium onion, diced

2 teaspoons salt, divided in half
2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
½ teaspoon pepper
1 cup white wine
5 cups hot chicken broth
2 cups Jasmine rice
¼ cup fresh Italian parsley, finely chopped
½ cup parmesan cheese
3. Fajita Pasta
3 tablespoons olive oil, divided into 2 tablespoons and 1 tablespoon
3 chicken breasts, cut into bite-sized pieces
1.25 ounce package fajita seasoning, about 2½ tablespoons, divided in half
1 large yellow onion diced
3 bell peppers (1 red, 1 yellow, and 1 green), sliced lengthwise
5 cloves garlic, minced
2 cups water
1 tablespoon Better Than Bouillon chicken base
½ cup heavy cream
10 ounces Rotel tomatoes
1 teaspoon garlic powder
1 teaspoon onion powder
8 ounces penne pasta, dried
Salt and fresh cracked pepper, to taste
