🥗🌿 Mediterranean Meatball Bowl with Tzatziki & Rice 🍚🍅

🛒 Ingredients:
For the meatballs:
500g ground beef or lamb 🥩
1 egg 🥚
2 tbsp breadcrumbs
2 garlic cloves, minced 🧄
1 tbsp chopped fresh parsley 🌿
Salt & pepper to taste 🧂
Olive oil for frying 🫒
For the bowl:
2 cups cooked white rice 🍚
1/2 cucumber, sliced 🥒
1/2 red onion, thinly sliced 🧅
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1 cup cherry tomatoes, halved 🍅
For the tzatziki:
1 cup Greek yogurt 🥄
1/2 cucumber, grated & squeezed
1 garlic clove, minced
1 tbsp lemon juice 🍋
1 tbsp chopped dill 🌿
Salt to taste
👨🍳 Instructions:
In a large bowl, mix ground meat, egg, breadcrumbs, garlic, parsley, salt, and pepper. Form into small meatballs and fry in olive oil until browned and cooked through. In another bowl, mix all tzatziki ingredients until well combined. To assemble, layer rice in a bowl, top with meatballs, fresh veggies, and a generous spoonful of tzatziki. Garnish with extra dill and enjoy!
