Black Eyed Peas & Rice
This is not just for New Year’s, I eat this all year long. It is a staple in my house. It goes with almost anything. Love it with some cornbread, especially Lacey Cornbread, sausage, fatback, pork chops, fried chicken. Hamburger steaks. The list goes on !
~~Ingredients~~
1 lb dried black-eyed peas
2 tablespoons vegetable oil
1 large onion, peeled and finely chopped
6 cups chicken stock or water
Seasoning meat of choice
1 teaspoon black pepper
Cooked rice
~~Instructions ~~
Drain your peas and pick out any foreign objects like small rocks and set aside.
In large Dutch oven or lard pot, add the oil and onions and saute' the onion until they are transparent. Add the peas, chicken stock or water, black pepper and seasoning meat.
Bring to a a rapid noil, let boil for five minutes. Then lower the heat, cover and cook over low heat until peas are tender, about 45 -60 minutes and adding any additional liquid if needed.
Remove the meat and set it aside and then pick any meat from the bones (if you have any) and add it back to the peas (discard skin, fat, and bones). Add salt and pepper to taste. Serve over rice.
