๐งบ Ingredients:
For the Meatballs:
500 g ground chicken or turkey
1 egg ๐ฅ
2 tbsp breadcrumbs
2 garlic cloves, minced ๐ง
2 tbsp fresh dill, chopped ๐ฟ
1 tsp salt & pepper
1 tbsp olive oil (for frying) ๐ซ
For the Bowl:
250 g cooked white rice ๐
1 cucumber, thinly sliced ๐ฅ
10โ12 cherry tomatoes, halved ๐
1 small red onion, thinly sliced ๐ง
For the Sauce (Quick Tzatziki Style):
150 g Greek yogurt
1 tbsp mayonnaise
1 garlic clove, minced
1 tbsp chopped dill ๐ฟ
Salt and pepper to taste
๐จโ๐ณ Instructions:
In a bowl, mix the meatball ingredients and shape into small balls. Pan-fry in olive oil over medium heat until golden and cooked through (about 10โ12 minutes). Meanwhile, mix all the sauce ingredients in a small bowl. Assemble bowls with rice, fresh cucumber, tomatoes, onion, and place meatballs on top. Add a dollop of the yogurt-dill sauce in the center and garnish with extra dill.

Add crumbled feta or olives for a Mediterranean flair.
Swap rice for quinoa or bulgur if desired.
