Lemon Ginger Chicken with Pineapple Mango Salsa

Ingredients:

For the Chicken:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
2 tbsp olive oil
1 tbsp grated fresh ginger
2 cloves garlic, minced
1/4 cup lemon juice (about 1 large lemon)
2 tbsp soy sauce (low sodium preferred)
1 tbsp honey
1 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp red pepper flakes (optional)
Salt and freshly ground black pepper to taste

For the Pineapple Mango Salsa:
1 cup fresh pineapple, diced
1 cup fresh mango, diced
1/2 red bell pepper, finely diced
1/4 red onion, finely diced
1/4 cup chopped fresh cilantro
2 tbsp lime juice
1 tbsp olive oil
Salt and freshly ground black pepper to taste

Instructions:

1. Prepare the Chicken Marinade: In a medium bowl, whisk together olive oil, grated ginger, minced garlic, lemon juice, soy sauce, honey, cumin, coriander, red pepper flakes (if using), salt, and pepper. Add the chicken pieces to the bowl and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or preferably for up to 2 hours, to allow the chicken to marinate.

3. Make the Salsa: While the chicken is cooking, prepare the pineapple mango salsa. In a medium bowl, combine the diced pineapple, mango, red bell pepper, red onion, and cilantro. In a small bowl, whisk together the lime juice and olive oil. Pour the dressing over the salsa and gently toss to combine. Season with salt and pepper to taste.
