Easy Ranch Pork Chops and Rice
Ingredients
2 TBS Butter
1 Cup Long Grain Rice
2-4 Pork Chops
14 oz Can Unsalted/Low Sodium Chicken Broth
1/4 Cup Water
1 1/2 TBS Ranch Seasoning Mix (or 1/2 of a Ranch seasoning packet)
Salt and Pepper
Preparation
Preheat oven to 350 degrees. Spray baking dish with non stick spray.
Melt butter in a saute pan. When melted, add rice and saute for 5 minutes.
Add the toasted rice to casserole dish.
Season pork chops on both sides with salt and pepper. Place them in the same saute pan used for the rice.
Brown for a few minutes on each side.
Place pork chops in casserole dish on top of rice.
Combine chicken broth and water.
Pour over the rice and pork chops.
Sprinkle with Ranch seasoning.
Cover with foil and bake for 45 minutes.
The rice may need more time. If it does, recover with foil and bake for an additional 10-15 minutes.
