Hearty Beef and Rice Casserole with Creamy Cheddar
Ingredients:
- 1 lb ground beef
- 1 cup white rice
- 1 can cream of mushroom soup
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 350°F.
2. In a skillet, cook the ground beef until browned. Drain any excess fat.
3. In a large bowl, mix together the cooked beef, rice, cream of mushroom soup, beef broth, onions, bell peppers, half of the cheddar cheese, salt, and pepper.
4. Transfer the mixture to a casserole dish and sprinkle the remaining cheddar cheese on top.
5. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
6. Serve hot and enjoy!
