Stuffed Pepper Soup
Ingredients
For the Soup Base:
1 lb (450g) ground beef or turkey (or plant-based ground “meat” for a vegan option)
1 tbsp olive oil (if needed, for sautéing)
1 medium onion, finely chopped
3 large bell peppers (red, yellow, and green), diced
3 cloves garlic, minced
1 cup uncooked white or brown rice (or cauliflower rice for low-carb)
1 can (14.5 oz) diced tomatoes, with juice
1 can (8 oz) tomato sauce
4 cups low-sodium beef or vegetable broth
1 tsp smoked paprika
1 tsp Italian seasoning
1 tsp salt (adjust to taste)
½ tsp black pepper
½ tsp crushed red pepper flakes (optional, for heat)
For Serving:
Fresh parsley or basil, chopped
Grated Parmesan or vegan cheese (optional)
