This Mediterranean-style ground beef stir-fry is flavor-packed, quick, and healthy! It’s loaded with garlic, spices, fresh veggies, and a hint of lemon, making it a perfect meal for busy weeknights. Serve it over rice, quinoa, or stuff it into pita bread for a delicious Mediterranean feast!

For the Stir-Fry
1 lb (450g) ground beef (or lamb/turkey)
2 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
1 cup cherry tomatoes, halved
½ cup pitted Kalamata olives, sliced
½ tsp ground cumin
½ tsp ground coriander
½ tsp paprika
½ tsp oregano
½ tsp salt (or to taste)
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
Juice of ½ lemon
2 tbsp fresh parsley, chopped
Optional Garnishes
Crumbled feta cheese 🧀

Tzatziki sauce for dipping
📌 Instructions
Step 1: Cook the Ground Beef
Heat olive oil in a large pan over medium-high heat.
Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink (about 5–7 minutes).
Drain excess fat if necessary.
Step 2: Sauté the Veggies & Spices
Add the chopped onion and cook for 2 minutes until slightly softened.
Stir in the garlic, bell pepper, and zucchini. Cook for another 4–5 minutes until veggies are tender but still have some crunch.
Add the cumin, coriander, paprika, oregano, salt, black pepper, and red pepper flakes. Stir well to coat everything in the spices.
Step 3: Add the Final Touches
Toss in the cherry tomatoes and Kalamata olives. Cook for 2 more minutes until tomatoes start to soften slightly.
Squeeze in the lemon juice and mix in fresh parsley.
Step 4: Serve & Enjoy
Serve hot over rice, couscous, quinoa, or inside warm pita bread.
Garnish with feta cheese, pine nuts, or a dollop of tzatziki sauce.
