Ingredients
For the Chicken:
π 1 lb chicken thighs or breasts (cut into bite-sized pieces)
π§ 2 cloves garlic (minced)
π― 2 tbsp honey
πΆ 2 tbsp soy sauce
πΆοΈ 1/2 tsp grated ginger
π« 1 tbsp olive oil
For the Vegetables:
π₯¦ 2 cups broccoli florets
π₯ 1 large carrot (sliced thinly)
πΆοΈ 1 red bell pepper (sliced)
π« 1 tbsp olive oil
π§ Salt & pepper to taste
For the Rice:
π 2 cups cooked jasmine or basmati rice
For Garnish:
πΏ 2 tbsp chopped scallions
πΎ 1 tbsp sesame seeds
Directions
Cook the Rice:
Prepare the rice according to package instructions. Fluff and set aside.
Cook the Chicken:
Heat olive oil in a skillet over medium heat. Add chicken pieces and cook until browned, about 6-8 minutes.
In a small bowl, mix honey, soy sauce, garlic, and ginger. Pour over the chicken and let it simmer for 3-4 minutes, stirring occasionally, until the sauce thickens.
SautΓ© the Vegetables:
In another skillet, heat olive oil over medium-high heat. Add broccoli, carrots, and bell pepper. SautΓ© for 5-6 minutes until tender-crisp. Season with salt and pepper.
Assemble the Bowl:
In each bowl, layer a base of rice. Add the sweet and savory chicken on top, followed by sautΓ©ed vegetables.
Garnish and Serve:
Sprinkle with chopped scallions and sesame seeds. Serve warm and enjoy!
